When someone mentions the word “edibles,” the same few things tend to come to mind. Chocolate bars, brownies, candies…things of this nature tend to dominate the mental space when the topic of digestible marijuana is uttered amongst friends. Which, to be fair, makes sense. I mean, for decades, the only sort of THC-infused piece of culinary creations we would stumble across always landed itself on the sweeter side of things.
Yes, we all love a solid cannabis cookie and whatnot, but are there any “grown up” edibles that we, marijuana enthusiasts, could enjoy? Must we always subject ourselves to the “kid’s table” when choosing an edible? It’s like, yes, we all agree, desserts are fantastic – with or without THC -but, as a maturing stoner, I am looking for something that is not only a bit fancier, but something I can make on my own – say, as part of a date night in with my equally-stoned significant other.
As demanding as this may sound, I also don’t want to have to do too much. Seeing as how I lack any real cooking skills to begin with, anything higher than a novice level of difficulty may prove to be insurmountable for someone with as little experience in the kitchen, like me. So, basically, I’m wondering if there is any sort of classy cannabis dish I could make to impress others, without seeming childish (or highfalutin).
Well, after scouring the web, I was able to unearth a truly unbeatable recipe that encapsulates all of those wants and needs – and then some.
Ladies and gentlemen, I present to you: Butternut Squash Cannabis Soup.
Not only is this orange bowl of soupy greatness incredibly delicious, it is a perfect accompaniment for an autumnal date night with your loved one. It looks great, tastes phenomenal, and the high this baby comes through with is super manageable, yet noticeable. Giggles and (hopefully)second helpings are guaranteed, but only if you follow this insanely simple recipe precisely.
However, let it be known now, that (much like every other recipe) this soup will need some THC-infused butter.
Now, if you know how to make a batch – fantastic. However, if you are currently clueless, and don’t feel like heading to your local dispensary to pick up a tub, allow me to quickly summarize this very simple process for you now.
Cannabis Infused Butter
The whole procedure starts off by selecting some top-notch bud to grind down. I would say aim for an amount that’s roughly between ¼-½ ounce off lower, but there is no “hard and fast” rule for how much you need. Just know that the more you put in, the more potent it will be – but I am sure that goes without saying.
Anyway, once you have that at the ready, place those ground budlets onto a baking sheet. Then, you will want to place those flowers inside an already heated oven at 240°. No more, no less.
At this level of heat, you will be able to begin the decarboxylation process on your chosen marijuana. What is decarboxylation, you ask? Well, in short, it is the heating of marijuana to a subtle point where in the THC (aka, the psychoactive element of cannabis) can finally become activated – without being burned off.
With the THC now activated and transferable, grab some of your most beloved butter. Toss that cannabis in with the butter, and mix it up until you feel it couldn’t be more inter worked with one another. Then, you will want to grab a cheesecloth and a container of some sort. Making sure to sift out the chunky, floral elements of this mixture using the cheesecloth, transfer this newly created potent butter into the aforementioned container, and stow away in a cool, dry place before using.
And, boom – that is how you make cannabis-infused butter. You can also use the same process to infuse any sort of oil you may use in recipes. Now that that is out of the way, it is time to get down to the nitty-gritty.

Instructions

  • If you feel like really getting fancy with this one, you can feel free to add a little dollop of sour cream, plain Greek yogurt, or crème fraiche to your end product. It often adds a nice touch of pizazz, and doesn’t take away from the soup’s amazing flavor spectrum whatsoever. If anything, it adds to it in the best way. But, again, this is not a required step.
  • To kick things off, grab a trusty knife and cut the butternut squash into little chunks – no bigger than an inch, or so. Once you have successfully completed that step, place all of those mini squash pieces to the side for the moment – you will need them later.
  • After that, grab the biggest pot you have, and start melting the vegetable oil and unmedicated butter together. Don’t worry, the cannabis-infused butter will come into the mix real, real soon – I promise.
  • Once those elements have melted, you can toss in the diced red pepper and onion, along with a pinch (or two) of salt. Keep an eye on this. You will know the onions are done cooking when they become translucent, which usually takes no more than 8 minutes.
  • When you feel like the onions have reached that point, you can then add the squash to the pot, along with the chicken stock. You will want to bring that pot to a simmer, and keep cooking that until the squash is nice and tender. I would say that would probably take anywhere from 15-20 minutes for that to happen.
  • After that time has passed, you can gently remove the chunks of squash from the pot. Make sure to have a blender nearby and ready to go, because you will be taking these squash chunks from the pot and putting them directly into the blender to puree them. Once you have accomplished the perfect puree consistency, take the blender full of soupy squash, and add it back into the pot.
  • Stir, stir, stir. You’ll want to make sure the flavors you’ve created so far are blended well within the entirety of the pot. You can also add in your desired amount of salt, pepper, and nutmeg at this point, as well.
  • The only thing missing is the cannabis-infused butter.
  • Toss it in the mix, and stir it in amongst its squash-y counterparts – but be sure to do so in a gentle manner, there is no need to ruin the consistency of the dish. Especially since you are so close to being done. After you feel like the cannabis-infused butter has been evenly spread around for optimal distribution, you can turn off your stove, grab your pot, and start plating. Or, in this case, “bowl-ing.”

Notes

Obviously, this is where you can add any of the aforementioned toppings, should you feel the need to, but honestly, this Butternut Squash Cannabis Soup is delicious on its own. It is sure to impress any and all who are lucky enough to enjoy it.
