- Preheat that oven of yours to a solid 325°. As that sucker warms up to our desired temperature, you should take that time to grease up a large baking tray, either with non-stick cooking spray, or butter.
- Then, you’ll want to grab a bowl for mixing, and in it, you’ll want to toss your coconut, flour, salt, and sugar. Mix all of those scrumptious ingredients up with one another as best you can before proceeding. And, once you are happy with how integrated everything is, you can set that bowl to the side for the time being, as you get to work on collecting your egg whites from 2 eggs.
- After you’ve successfully separated the whites from the yolks into a different bowl, you can add in your vanilla extract, and whisk everything up very, very well. Seriously, give this whisking all the effort you can muster, and if you need to use an electric hand mixer, that is completely fine. You’ll know you’re done when the contents take on a frothy, almost shiny complexion.
- At this point, you can add these freshly whisked egg whites (and vanilla) to the bowl of dry coconut and flour. Once those elements are combined, be sure to mix everything together to the best of your ability. When everything is looking fluffy and airy, you can move on with the recipe.
- When you’ve achieved that desired consistency with your mixture, you’ll want to distribute scoops of this mix, one tablespoon at a time, onto your previously greased baking tray. Continue with this task until there is no more mixture in the bowl.
- At this point, your oven should be ready to go, and if it is, toss this baking tray(s) inside, and allow it to bake until the macaroons are a nice, golden brown. Which, in my experience, takes about 15-18 minutes, so keep an eye on them, to ensure they don’t burn in the process.
- Now it’s time to work on your infused chocolate coating.
- To do that, you’ll want to prepare a double-boiler for yourself. Once the water in the pot below reaches a boil, dump your cannabis-infused butter in the top bowl, and allow that butter to fully melt.
- When it does, that’s when you can add the chocolate to the butter. Let both of these ingredients melt into one another, stirring it up ever so slightly with a spatula, to ensure there is even distribution of the potent butter throughout the chocolate. The moment you notice the contents start to look smooth and glossy, you can move on to the next step.
- Upon completing that task, check on your macaroons, which should be about done at this point. If they are, remove them from the warm confines of the oven, and allow them to cool on a wire rack. But don’t let your chocolate harden, keep the heat source on a “simmer” to allow the infused chocolate concoction to stay in liquid form until the macaroons are ready.
- Finally, when the macaroons are cooled down enough, you can pick up each one, and expertly dunk it into the cannabis-infused chocolate mixture. When each piece has been perfectly coated, allow them to toughen up a touch before eating. But, other than that, you’re done!
