If you feel like really getting fancy with this one, you can feel free to add a little dollop of sour cream, plain Greek yogurt, or crème fraiche to your end product. It often adds a nice touch of pizazz, and doesn’t take away from the soup’s amazing flavor spectrum whatsoever. If anything, it adds to it in the best way. But, again, this is not a required step.
To kick things off, grab a trusty knife and cut the butternut squash into little chunks - no bigger than an inch, or so. Once you have successfully completed that step, place all of those mini squash pieces to the side for the moment - you will need them later.
After that, grab the biggest pot you have, and start melting the vegetable oil and unmedicated butter together. Don’t worry, the cannabis-infused butter will come into the mix real, real soon - I promise.
Once those elements have melted, you can toss in the diced red pepper and onion, along with a pinch (or two) of salt. Keep an eye on this. You will know the onions are done cooking when they become translucent, which usually takes no more than 8 minutes.
When you feel like the onions have reached that point, you can then add the squash to the pot, along with the chicken stock. You will want to bring that pot to a simmer, and keep cooking that until the squash is nice and tender. I would say that would probably take anywhere from 15-20 minutes for that to happen.
After that time has passed, you can gently remove the chunks of squash from the pot. Make sure to have a blender nearby and ready to go, because you will be taking these squash chunks from the pot and putting them directly into the blender to puree them. Once you have accomplished the perfect puree consistency, take the blender full of soupy squash, and add it back into the pot.
Stir, stir, stir. You’ll want to make sure the flavors you’ve created so far are blended well within the entirety of the pot. You can also add in your desired amount of salt, pepper, and nutmeg at this point, as well.
The only thing missing is the cannabis-infused butter.
Toss it in the mix, and stir it in amongst its squash-y counterparts - but be sure to do so in a gentle manner, there is no need to ruin the consistency of the dish. Especially since you are so close to being done. After you feel like the cannabis-infused butter has been evenly spread around for optimal distribution, you can turn off your stove, grab your pot, and start plating. Or, in this case, “bowl-ing.”
