Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and fluffy. Remove from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
While the quinoa is cooking, prepare the Buddha bowl toppings. You can roast vegetables in the oven or sauté them in a pan until tender. Cook chickpeas or tofu according to your preference.
In a small mixing bowl, whisk together the olive oil, lemon juice, maple syrup or honey, Dijon mustard, CBD oil or CBD-infused coconut oil, salt, and pepper to make the CBD-infused dressing.
Assemble the Buddha bowls by dividing the cooked quinoa among serving bowls. Arrange the mixed greens or spinach, roasted vegetables, avocado slices, and cooked chickpeas or tofu on top of the quinoa.
Drizzle the CBD-infused dressing over the Buddha bowls.
Garnish with hemp seeds or pumpkin seeds for added texture and nutrition.
