Using a spoon or cookie scoop, portion out the dough and roll it into balls. Place the dough balls onto the prepared baking sheet, leaving space between each one
Flatten each dough ball slightly with the palm of your hand or the bottom of a glass to form a cookie shape

Once the cookies are cooled, scoop a generous amount of cannabis-infused ice cream onto the bottom side of one cookie
Place another cookie on top of the ice cream to form a sandwich, pressing down gently to adhere
Repeat the process with the remaining cookies and ice cream to make additional ice cream sandwiches
Serve the Herbal Ice Cream Sandwiches immediately, or wrap them individually in parchment paper and freeze for later enjoyment
