For the cannabis cream cheese glaze, you’re going to need:
3Tablespoonsof Cannabis-Infused ButterSoftened
6Ouncesof Cream CheeseSoftened
1Cupof Confectioners’ Sugar
½Teaspoonof Vanilla Extract
¼Cupof Milk
Instructions
Kick things off by preheating your oven to 200°.
Next, grab a mixing bowl, and whisk together your vinegar and 2 cups of milk. Let that mixture sit for about 2 minutes, until the milk has soured.
Then, in a big mixing bowl, sift your flour, salt, baking soda, baking powder, cocoa powder, and white sugar together. Be sure to whisk up those contents until everything is fully incorporated with one another.
Next, in a completely different bowl, you’ll want to whisk together that soured milk mixture with your cannabis-infused butter, 2 eggs, 2 teaspoons of vanilla extract, and red food coloring.
When you’re happy with how that’s looking, take that milky mixture, and add it to your flour mixture, and keep stirring it up until you’ve adequately blended everything together. This, my friends, is your pancake batter. And, yes, it should be nice and lumpy.
Now, heat up a skillet over “Medium-to-Low” heat, and apply a healthy coating of non-stick cooking spray to the interior of the pan.
Following that, plop your batter inside the skillet to cook, and be sure to do so roughly ¼ cup at a time. Allow that to cook for a few minutes. Then, when you see bubbles form and the edges start to dry up a bit, you can flip them, and cook the other side for another few minutes.
Repeat that pancake-making process with the rest of your delicious batter. And, once they are all done, place them inside that preheated oven for the time being.
Prepare cream cheese glaze
This will keep them warm, as you get to work on your cannabis cream cheese glaze.
In order to do that, you’ll want to grab yet another mixing bowl. In this one, beat together your cannabis-infused butter and cream cheese. Keep mixing those elements together until the contents develop an airy, soft texture. That, in my experience, usually only takes a couple of minutes.
After that, toss in ½ teaspoon of vanilla extract, ¼ cup of milk, and 1 cup of confectioners’ sugar. Keep mixing and stirring those contents until they become nice and smooth. If you need to add more milk in order to achieve that “glaze” consistency, you can feel free to do so.
When your glaze is ready, remove the pancakes from the warming oven, and plate them up. Apply a “healthy” drizzle of your cannabis cream cheese glaze over each serving, and prepare to have one of the best THC-enriched meals of your entire life!
