- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons Thai red curry paste
- 1 can (14 ounces) coconut milk
- 3 cups vegetable broth
- 1 medium sweet potato, peeled and diced
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1 tablespoon soy sauce or tamari
- 1 tablespoon lime juice
- Salt and pepper to taste
- 1 dropperful of CBD oil or CBD tincture
In a large pot or Dutch oven, heat the coconut oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and grated ginger to the pot, and cook for another 2 minutes, stirring frequently.
Stir in the Thai red curry paste and cook for 1 minute, until fragrant.
Pour in the coconut milk and vegetable broth, and stir to combine. Bring the mixture to a simmer.
