For starters, you’re going to want to grab a saucepan. In it, mix together your strawberries, rhubarb, ½ cup of sugar, 1 tablespoon of water, and lemon juice.
When you’ve adequately combined those elements together, you’ll want to cook them over “Medium-to-Low” heat, fully covered, for about 5 minutes. Don’t forget to give the contents a stir every now and then during this step, as it comes to a full boil. When it reaches that boiling point, reduce the heat to a “Low” setting.
Now, you’ll want to preheat your oven to a classic 350°.
As that warms up, grab a 9” deep-dish pan, and thoroughly spray the interior of it with some non-stick cooking spray. Following that, simply place it atop a nearby baking sheet.
Then, in a different mixing bowl, beat together ½ cup of sugar and ½ cup of cannabis-infused butter. I’d suggest utilizing the powers of an electric mixer for this step. Mainly because you’ll want to keep beating those elements together, until they become airy and light.
At which point, you’ll beat in your vanilla extract, egg, and yogurt. Followed by your baking powder, baking soda, salt, and flour. Keep mixing everything together until they are intricately incorporated with one another.
When you’re happy with how that looks, spread roughly ⅔ of that newly-created batter into that previously-prepared pan of yours.
On top of that, pour in your strawberry-rhubarb filling. Followed by the remaining third of your deliciously dank batter, but do so in strategically placed mounds. When you’ve accomplished that quick goal, set everything to the side for the time being.
At this point, you’ll want to grab another mixing bowl, and in this one, mix together your ¼ cup of flour, brown sugar, and 2 tablespoons of cannabis-infused butter.
Using whatever utensil (or implement) that suits you best, keep mixing up all of those ingredients, until the contents take on a super crumbly, somewhat rough texture and consistency.
Upon completing that step, simply sprinkle some of that delectable concoction atop the batter.
Lastly, place the entire creation into the oven for about 35 minutes. You’ll know it’s ready to be taken out, when the exterior of the cake turns a gorgeous golden brown. Only one thing left to do at that point: cut yourself a slice, and enjoy the mellow (and delicious) experience that this THC Strawberry-Rhubarb Buckle is famous for!
