THC Infused Pound Cake

As a child, some of the earliest memories I have are food-related. I think the same could be said for most of us. Now, this could be for a number of different reasons. It could be because a loved one worked with us to create something that the whole family enjoyed. Perhaps it was from a tasty treat we tried while on vacation. However, regardless of what the case may be, the majority of our fond food-centric memories are routinely based around sweets. And rightfully so! I mean, who doesn’t love settling in with a plate full of sugar-laden deliciousness? Especially if it has been ages since you were able to do so.

For me, such an experience can be found with Pound Cake.
Now, I am not entirely certain how many of my fellow cannabis enthusiasts out there have ever even tried Pound Cake. But for those lucky few who have, you know exactly what I am talking about. This butter-rich treat didn’t always find its way into my family’s kitchen growing up, but whenever it did, I was always the one eating the majority of it - much to the rest of my family’s chagrin (specifically, my older sister).
Like most cakes, this is a perfect treat to enjoy after a hearty meal. But, it is just as delicious as a sweet accompaniment to an otherwise boring breakfast. I mean, honestly, a couple thick slices of pound cake with a cup of coffee is damn near unbeatable, in my humble opinion.
However, for one reason or another, in my more adult years, I have rarely crossed paths with this beloved treat from my childhood. Which has got me thinking: Why can’t I just make some Pound Cake of my own?
The answer to that question is obvious. There is nothing holding me back from rolling up my sleeves and heading into the kitchen, other than laziness. But if I’m going to go through all the trouble of resurrecting one of my earliest culinary memories, I want to do it right. Nay, I want to do it better than ever. I want this Pound Cake to not only taste great, I want it to make me feel great. What better way to do that than by making my own THC-Infused Pound Cake from scratch?
That is precisely what I was able to do with this incredibly easy-to-follow recipe. If you make sure to adhere to these short, simple steps, you will be chowing down on some potent Pound Cake of your very own in no time flat. To be honest, I can’t think of a better way to round out that all-too-reliable “wake and bake” session we all know and love than with some enriched Pound Cake.

There are a couple components that you will need to make beforehand. Some of you may have seen my previous recipes on how to make custom cannabis oil and butter. If you still have some of that lying around your kitchen, you are going to want to grab those before continuing on.

But, for the sake of time, I am happy to give a super brief breakdown of how to make them. Although, I would strongly suggest checking out my prior pieces to get a more in-depth breakdown of each.
So, without any more senseless jibber-jabber, let’s get into this super scrumptious recipe, shall we?

Equipment

  • Loaf pan roughly 9”x5” in size
  • Decent sized bowl
  • Hand mixer
  • Large bowl

Ingredients

  • 4 Large Eggs
  • 2 Cups All-Purpose Flour
  • 1 ½ Teaspoons Baking Powder
  • 1 Cup Granulated Sugar
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Kosher Salt
  • ½ Teaspoon Almond Extract

Instructions

  • Preheat oven to 240°
  • In order to make infused cannabis butter and oil, it is essentially the same process. You will want a decent amount of flowers for each batch.
  • In the oven, at roughly 240°, place your desired buds on a baking sheet and allow the THC component to activate, via a sensation known as decarboxylation.
  • Once you have properly de-carbed your bud, you will simply want to combine it with regular butter and/or oil. Being sure to use a cheesecloth to rid the final product of any unwanted floral components.
  • Allow it to sit for a bit, either at room temperature or in the fridge, before proceeding onward.
  • And, of course, your previously made cannabis butter and oil.

THC Infused Pound Cake Instructions

  • Preheat oven to 350°.
  • While that is warming up, grab your pre-made cannabis oil and a loaf pan (roughly 9”x5” in size).
  • Liberally apply that cannabis oil in the loaf pan - this will not only add some much-needed potency to the recipe, but it will make sure that the Pound Cake doesn’t stick directly to the pan when it comes out of the oven.
  • Then, in a decent-sized bowl, using a handy-dandy hand-mixer, combine the cannabis butter and the aforementioned sugar together.
  • You will want to continue to mix these components up until they posses a very fluffy, airy consistency. It is at this time that you will want to add the eggs - but be sure to do so one at a time.
  • After you have successfully blended all that together, you can feel free to toss in the almond and vanilla extracts.
  • At this point in the recipe, you will need to grab yourself another, equally large bowl. In this one, toss in your baking powder, salt, and flour - and whisk all those bad boys together.
  • Then you can add these dry ingredients into your other bowl full of wet ingredients, and keep stirring everything together until they are expertly combined with one another.
  • Pick up that pre-oiled loaf pan, and ever so carefully pour in that batter. Make sure to smooth out the top of your concoction - nobody wants a lumpy loaf, am I right?
  • Once you have leveled off the upper components of your batter, toss that pan into the preheated oven for an hour or so. You will know that the loaf is done when you are able to stick a toothpick into the interior and remove it without any sort of batter residue stuck to it.
  • When you feel like your loaf has reached “peak doneness” take it out of the oven, and let that cool down for 10 or so minutes.
  • Once that time has passed, carefully upturn your loaf pan, and deposit your newly created THC-Infused Pound Cake atop a cooling rack to allow the entire loaf to get some much-needed air. After a handful of minutes, you will see that this baby is ready to be enjoyed.

And that is it. In no time at all, you were able to go from nothing to a fully-potent THC-Infused Pound Cake without ever having to do much more than combine a few simple ingredients.
As I alluded to above, Pound Cakes are great at almost any time of the day. But, if I had my druthers, I don’t think there’s a better time to enjoy a THC-Infused Pound Cake than after a lazy weekend morning “wake and bake” session. Oh, and don’t forget to sip some coffee along with this piece of culinary greatness. You will be happy you did - trust me.
