Simple Recipe For THC Sweet Potato & Bean Quesadillas
Cheese quesadillas are classic, but I always felt like they were missing something. To me, they needed something hearty, wholesome, and home-cooked, but I didn’t want to lose any of the iconic quesadilla essence that made these discs of deliciousness so legendary. And, no, it’s not just because it can get you high. Although, that’s quite a perk. These things taste incredible, are super easy to make at home, and always deliver a steady series of calming effects. What more could you ask for?
To kick things off with this recipe, you’re going to want to thoroughly scrub down your sweet potatoes. Then, you’ll want to grab a fork, and strategically pierce each one multiple times, before placing them gently onto a microwave-safe plate.
Once that step is complete, place that plate of potatoes in the microwave, and let it cook for a few minutes on high, without a cover. Then, turn the potatoes over, and keep cooking them, again on high, for another few minutes. You’ll know they are ready to go when they are nice and tender.
After that, when you can pick them up without burning yourself, cut each of those spuds in half, length-wise. Then, with a spoon, scoop out all of their delicious innards.
Now, apply a drizzle of some of your cannabis-infused olive oil on the scoopings. Use however much you’d like, but don’t get too crazy here.
Then, take those scoopings, and spread them onto half of each of your tortillas.
On top of that, place your cheese and beans, before folding the other half of the tortilla over everything.
Now, head on over to your stove, and grab a cast-iron skillet. In it, toss in a couple tablespoons of your cannabis-infused olive oil, before placing the quesadillas inside to cook on “Medium” heat for about 3 minutes on each side. You’ll know they are ready when each one develops a golden brown color.
At that point, remove them from the skillet, place them on a plate, along with a dollop of salsa, and get your grub on.
