Ingredients
- 1 Egg
- 1 Tablespoon of Ground Ginger
- 1 ½ Teaspoons of Baking Powder
- 1 ¾ Teaspoons of Ground Cinnamon
- 2 Teaspoons of Vanilla
- 3 Cups of Flour All-Purpose
- 6 Tablespoons of Cannabis Butter
- ¾ Teaspoon of Baking Soda
- ¼ Teaspoon of Salt
- ¼ Teaspoon of Ground Cloves
- ¾ Cup of Dark Brown Sugar
- ½ Cup of Molasses

Before we even had a chance to digest our turkey this year, we were bombarded by an onslaught of Christmas decorations, music, and advertisements. This Santa-trend normally happens as we close in on December 25th, but it's been popping up in the zeitgeist earlier and earlier each year. While there are a veritable plethora of baked goods one could partake in during the holiday season, one classic creation is always head and shoulders above the competition- literally.If you haven't guessed yet, I'm talking about gingerbread cookies, of course!These tasty little gingerbread people are a staple at Christmastime, and it's damn near blasphemous not to whip up a batch of your own while waiting for Saint Nick to make a pit stop down your chimney. To be honest, any excuse to make some cookies is more than fine with me. And these are some of the best out there. There's a whole lot to like about gingerbread cookies, but in my opinion, I always felt like they were missing a little something. Turns out, I was right! And that "little something" just so happens to be marijuana!

Instructions
- The first thing you'll want to do is get your hands on a small bowl.
- In it, you'll want to blend the cinnamon, cloves, salt, ginger, baking powder, baking soda, and flour with the help of your trusty whisk.
- Next, you'll want to utilize your stand mixer. If you don't have a stand mixer, try your best to adequately replicate its professional stirring motions. It's not impossible, but it may be easier to use a stand mixer for this recipe, to be honest.
- Either way, if you’re lucky enough to have one of these miraculous kitchen appliances, grab a large bowl, and expertly beat up the egg, cannabis butter, and brown sugar in it. I’d suggest using a medium setting for this part.
- Once you feel like that is nice and mixed, you can grab your vanilla and molasses, and add those babies into the blend, as well. Keep that stand mixer on "blend mode" because you're going to want these flavors to evenly distribute their greatness throughout the bowl.
- As that continues to move, pick up those dry ingredients from the other, smaller bowl, and gently add them into the mix. Don’t just dump the whole thing at once, be strategic with your pour. A little finesse goes a long way here. And you’ll want to keep that stand mixer on “Medium” until the contents develop a nice, smooth consistency and texture.
- Plop that newly-created dough out of the bowl and cut it in half. Take each half of the dough and throw it into some plastic wrap.
- You'll want these halves to rest at room temp for a long time. I'm talking like anywhere from 2-8 hours. Yeah…that long.
- After that, throw them in the fridge to keep them fresh. When you're ready to start baking cookies, remove them from their cold confines, and allow them to return to room temperature before you start doing anything.
- While that's happening, preheat that oven of yours to 375°. Also, get some baking sheets ready by placing some parchment paper upon them. This will prevent the cookies from sticking to the sheet, itself. If you don't have parchment paper, you can grease the baking sheet with more cannabis butter (or regular butter), if you'd like.
- When your dough has returned to room temperature, sprinkle a bit of flour onto your counter, and hit your rolling pin with a touch of flour, too. This helps keep the rolling process from becoming a sticky disaster. And trust me, nobody wants that.
- When it comes to rolling out your dough, you’re aiming for the final result to be close to a ¼ inch or so in thickness. Feel free to keep using flour throughout the rolling process if sticking becomes an issue. Then, when that’s all said and done, it’s time to grab a cookie cutter of your choosing.
- Personally, I like the classic gingerbread man figure. It's unbeatable, in my opinion. Cut out these gingerbread cookies in whatever shape your little heart desires. There's really no wrong answers here, so get creative with it, if you'd like.
- However, you choose to cut them, just make sure you place them a little over an inch apart from one another when you inevitably place them on the baking sheet. This allows them some room to grow while they cook. If not, the whole batch will be one big blob of gingerbread dough.
- Which, to be honest, doesn't sound terrible – but that's not what we're going for here, so give these boys a little breathing room.
- While the dough making process took some time, the cooking of these suckers is relatively quick. Each sheet takes only about 8-10 minutes to cook. Which is a breeze compared to other steps in this recipe.
- When they're done, pull them out of the oven, and allow them to cool down with the help of a wire rack.
- You'll want these cookies to cool down before adding any decorations to them. If not, over-eager decorators may see their creations melt before their very eyes.
- But, if you wait till their cooled and ready, you'll have no problem whatsoever.
