Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 medium sweet potato, peeled and diced
  • 1 medium zucchini, sliced
  • 1 red bell pepper, diced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 tablespoons CBD-infused dressing

Instructions

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and fluff with a fork.
  • While the quinoa is cooking, spread the diced sweet potato, sliced zucchini, diced red bell pepper, and sliced red onion on the prepared baking sheet. Drizzle with olive oil and sprinkle with dried thyme, dried oregano, salt, and pepper. Toss to coat evenly.
  • Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and lightly browned, stirring halfway through cooking.
  • Divide the cooked quinoa and roasted vegetables among serving bowls. Drizzle with CBD-infused dressing, if using.
