Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or turkey
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 cups beef or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon cannabis-infused oil

Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes
  • Add the ground beef or turkey to the pot, breaking it up with a wooden spoon or spatula. Cook until browned and cooked through, stirring occasionally, about 8-10 minutes
  • Stir in the kidney beans, black beans, diced tomatoes, tomato paste, and beef or vegetable broth. Add the chili powder, ground cumin, smoked paprika, salt, and pepper, to taste. If using cannabis-infused oil, add it to the pot at this time
  • Bring the chili to a simmer, then reduce the heat to low. Cover and let the chili simmer for 1 hour, stirring occasionally to prevent sticking
  • After 1 hour, remove the lid from the pot and continue to simmer the chili uncovered for an additional 30 minutes, or until thickened to your desired consistency
  • Taste the chili and adjust the seasoning if needed. Serve hot, garnished with your favorite toppings such as shredded cheese, sour cream, sliced jalapeños, or chopped cilantro

Notes

  • Adjust the level of spice to your preference by adding more or less chili powder and smoked paprika.
  • Leftover chili can be stored in an airtight container in the refrigerator for up to 3 days or frozen for longer storage.
