Ingredients

  • 4 cups diced honeydew melon
  • 1 cup diced English cucumber
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup Peppadew peppers, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  • Prepare the ingredients: In a blender or food processor, combine the diced honeydew melon, cucumber, red bell pepper, red onion, Peppadew peppers, and minced garlic
  • Blend the soup: Blend the ingredients until smooth, scraping down the sides of the blender or food processor as needed. Depending on the size of your blender or food processor, you may need to blend the soup in batches
  • Season the soup: Once the soup is smooth, add the fresh lime juice, extra virgin olive oil, and white wine vinegar. Season with salt and pepper to taste, and blend again until everything is well combined
  • Chill the soup: Transfer the gazpacho to a mixing bowl and cover it with plastic wrap. Place it in the refrigerator to chill for at least 1 hour, or until cold
  • Serve: Once chilled, divide the gazpacho into serving bowls. Garnish each bowl with fresh basil leaves, if desired. Serve immediately and enjoy the refreshing flavors of Gazpacho with Honeydew & Peppadew
