Instructions
- First things first, head on over to your oven, and preheat that bad boy to a classic 350°.
- As that warms up, take this time to thoroughly grease up a baking dish. I’d say aim to use one that’s roughly 9” x 13”.
- Next, grab yourself a mixing bowl. In it, whisk together your 2 tablespoons of sugar and 2 cups of all-purpose flour. And, when you feel like those are adequately blended together, you can cut your cannabis-infused butter into the mixture, and keep stirring. Don’t stop stirring until the contents transform into rough crumbs.
- At that point, you can take those crumbly contents and press them into the bottom of that previously-greased baking dish. Don’t forget to press those contents up the edges of the dish, as well.
- When your oven is ready, toss that crust in to bake for roughly 20 minutes. You’ll know it’s ready to take out when it starts to brown ever so slightly.
Prepare filling
- Following that, you’ll need another mixing bowl, and in this one, combine your cream, egg yolks, salt, ⅓ cup of all-purpose flour, and 2 cups of sugar. Once you’ve expertly blended all of those ingredients with one another, you can feel free to stir in the strawberries and rhubarb.
- Upon completing that step, you can transport that filling into your previously-baked crust. When you’ve done that, simply toss it back in the oven to bake for an additional 55-60 minutes. You’ll know it’s time to take it out when you can see that the filling has fully set.
- As that bakes in the oven, you’ll want to grab yet another mixing bowl – a large one this time. In it, beat together your egg whites and cream of tartar. You should use an electric mixer for this step, and be sure to place it on “Medium-to-High” speed. Keep beating those elements together until the contents develop peaks.
- When that happens, slowly beat in your ¾ cup of sugar, and keep that going until the peaks turn shiny and glossy. Then, follow that up with your vanilla extract.
