Ingredients

  • 2 cups cooked white rice, preferably chilled (day-old rice works best)

Instructions

  • Heat the cannabis-infused cooking oil in a wok or large skillet over medium-high heat
  • Add the minced garlic and diced onion to the hot oil and stir-fry until fragrant and translucent, about 2-3 minutes
  • Add the diced carrots to the wok and continue stir-frying for another 2-3 minutes, or until slightly softened
  • Push the vegetables to one side of the wok, then pour the beaten eggs into the empty space. Allow the eggs to cook undisturbed for a few seconds until they start to set, then scramble them until fully cooked
  • Once the eggs are cooked, add the cooked white rice to the wok, breaking up any clumps with a cooking spoon or spatula
  • Stir in the thawed peas and sliced green onions, then drizzle the soy sauce and oyster sauce (if using) over the rice. Mix well to combine all the ingredients evenly
  • Continue stir-frying the rice mixture for another 3-4 minutes, or until heated through and well combined. Season with salt and pepper to taste
