Ingredients
- 2 cups cooked white rice, preferably chilled (day-old rice works best)
- 2 tablespoons cannabis-infused cooking oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 carrots, diced
- 1 cup frozen peas, thawed
- 2 green onions, thinly sliced
- 2 eggs, beaten
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper, to taste
- Sesame seeds and sliced green onions for garnish
Instructions
- Heat the cannabis-infused cooking oil in a wok or large skillet over medium-high heat
- Add the minced garlic and diced onion to the hot oil and stir-fry until fragrant and translucent, about 2-3 minutes
- Add the diced carrots to the wok and continue stir-frying for another 2-3 minutes, or until slightly softened
- Push the vegetables to one side of the wok, then pour the beaten eggs into the empty space. Allow the eggs to cook undisturbed for a few seconds until they start to set, then scramble them until fully cooked
- Once the eggs are cooked, add the cooked white rice to the wok, breaking up any clumps with a cooking spoon or spatula
