Ingredients
- 2 lobster tails
- 2 tbsp cannabis-infused butter (cannabutter)
- 2 tbsp regular butter
- 1 small onion, finely chopped
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1/2 cup dry white wine
- 4 cups seafood or fish stock
- 1 bay leaf
- 1/2 tsp dried thyme
- 1/2 cup heavy cream
- 1/4 cup brandy (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, bring water to a boil. Add lobster tails and cook for about 5-7 minutes until they turn bright red. Remove the lobster tails and set them aside to cool
- Once cooled, remove the lobster meat from the shells. Chop the meat into bite-sized pieces and reserve the shells
- In the same large pot, melt 2 tablespoons of regular butter over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes
- Add the minced garlic and cook for another 1-2 minutes until fragrant
- Stir in the tomato paste and cook for 2 minutes, then add the white wine. Cook until the wine has reduced by half
- Add the seafood stock, reserved lobster shells, bay leaf, and thyme to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes to let the flavors develop
- Remove and discard the lobster shells and bay leaf
