Ingredients

  • 2 lobster tails
  • 2 tbsp cannabis-infused butter (cannabutter)
  • 2 tbsp regular butter
  • 1 small onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup dry white wine
  • 4 cups seafood or fish stock
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 1/2 cup heavy cream
  • 1/4 cup brandy (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large pot, bring water to a boil. Add lobster tails and cook for about 5-7 minutes until they turn bright red. Remove the lobster tails and set them aside to cool
  • Once cooled, remove the lobster meat from the shells. Chop the meat into bite-sized pieces and reserve the shells
  • In the same large pot, melt 2 tablespoons of regular butter over medium heat. Add the chopped onion, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes
  • Add the minced garlic and cook for another 1-2 minutes until fragrant
  • Stir in the tomato paste and cook for 2 minutes, then add the white wine. Cook until the wine has reduced by half
  • Add the seafood stock, reserved lobster shells, bay leaf, and thyme to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes to let the flavors develop
  • Remove and discard the lobster shells and bay leaf
