How To Whip Up Some Weed Watermelon Cookies

- 1 ½ Teaspoons of Baking Powder
- 2 Cups of All-Purpose Flour
- ½ Cup of Shortening
- ¾ Cup of White Sugar
- 1 Egg
- 1 Tablespoon of Milk
- 1 Teaspoon of Vanilla Extract
- 3 Drops of Red Food Coloring
- ⅓ Cup of Mini Semi-Sweet Chocolate Chips
- 1 ½ Cups of Confectioners’ Sugar
- 2 Tablespoons of Water
- 3 Drops of Green Food Coloring

When you think about Summer, what comes to mind? For me, it’s barbeques, cookouts, and time spent in the warm, soothing embrace of that Summer sun. During such outdoor events, I’d often stumble across the same fare. Some chilled beverages, some well-made steaks or burgers, and of course, some watermelon. Now, if only there was a way to combine my love for watermelon, with my love for cannabis cookies, why that would be ideal. Which, coincidentally, is exactly how these Weed Watermelon Cookies came to be.

- For this recipe, you’ll want to start out by grabbing a small mixing bowl. In it, you’ll want to expertly combine your baking powder, salt, and flour. When you’re done with that, set that bowl to the side for the time being.
- Following that quick step, in another bowl, beat together your cannabis-infused butter and shortening, preferably with an electric mixer, until the contents take on a light, airy consistency. When that happens, you can slowly toss in your sugar. And don’t stop mixing, keep that going the whole time.
- After that, you can stir in your milk, vanilla, and egg.
- Next, grab that previously mixed together flour blend, and add it to this newly made cream mixture. And really mix these two elements together to the best of your ability.
- Then, toss in a tiny amount of red food coloring, and keep mixing and beating all of those elements together.
- At this point, you will want to shape the dough into a ball, cover it up, and place it in the fridge for 3 hours, at the very least.
- Now, head on over to your oven, and preheat that bad boy to 375°.
- Upon completing that simple step, take that dough, and cut it in half. Take one of those halves, and keep it in the fridge.
- With the portion that’s not in the fridge, you will want to roll it out until it develops a thickness of about ¼”. Be sure to do that on a lightly floured countertop, to avoid any sort of sticking.
- Grab a cookie cutter that is in the shape of a circle, and use it to cut out “half circles” of dough, which you will then place onto an ungreased cookie sheet.
- After you’ve placed your half-circle, red-colored cookies onto the cookie sheet, strategically place and press in your desired amount of chocolate chips into it. These will resemeble the watermelon’s seeds, when it’s all said and done – so use that as guidance during your placement choices.
- Continue to repeat that very same procedure with the rest of your dough.
- At this point, your oven should be ready to go. If it is, toss the cookies inside to bake for around 10 minutes. Don’t let these cookies brown at all, as it is their color that makes them truly unique.
- When that baking period is complete, remove them from the oven, and place them on a wire rack to cool down.
- As those cookies mellow out, you can get to work on your frosting. To do that, you’ll need to mix together your water and powdered sugar in a bowl, and keep mixing them together until they develop a super smooth consistency and texture.
- When that happens, toss in your green food coloring, and mix that into the contents until it is fully incorporated with those ingredients.
- Then, take that green frosting, and carefully dip each cookie’s edge into it, resembling that trademark watermelon green. When you’re done with that, place each freshly-dipped cookie on a some wax paper for a moment, to allow the frosting to firm up a touch.
