Ingredients

The ingredients that you will need are as follows:

  • 1/4 cup coconut flour
  • 1/2 cup gluten free baking flour
  • 1/4 cup brown rice flour
  • 2 tablespoons melted cannabis-infused oil
  • 2 tablespoons black strap molasses
  • 1 tablespoon dry ground cannabis
  • 1 tablespoon powdered ginger
  • 2 tablespoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup hemp milk
  • 1/4 cup water
  • 1 flax egg

Ah, breakfast. Many consider this to be the most important meal of the day – and it is really hard to argue against that. In fact, I would go so far as to say you would be hard-pressed to find any living soul who would shove away a delectable meal in the morning hours – especially if they have just enjoyed a thorough wake-and-bake session. That sort of pre-noon hunger is something the average cannabis enthusiast is more than familiar with – myself included.

Truly, the only thing better than a pre-brunch smoke session is feeding those “munchies” with a sincerely scrumptious plate of epic breakfast. But, why does the cannabis need to stop when the morning joint or bowl runs out? Why can’t we keep the party going, so to speak, with a seriously dank morning meal? I certainly can’t find a reason not to – which is what prompted me to rack my brain for some sort of THC-infused breakfast option. Of which, there are plenty.
But why go for something boring and generic? This is the time to use that creativity of yours to produce a breakfast that is not only epic with its taste and flavor, but one that is chock full of cannabis, as well. That is when I finally landed on the recipe for Cannabis Gingerbread Pancakes. And, let’s just say, I am super happy that I did – because, without any sort of exaggeration or hyperbole, this may be the best breakfast I have ever made – regardless of dankness. I mean that wholeheartedly as a lifelong fan of everyone’s “first meal.”

Seriously, what is not to love? I mean, even the name Gingerbread Pancakes has my mouth watering – and I am sure I am not the only one. Everything one enjoys about this usually winter-related flavor pairing works year-round, in my personal opinion. So, for those cannabis enthusiasts who may shrug and scoff at such a notion, I urge you to try this recipe, at least once, and I challenge you to not join my side of the argument. It will be damn near impossible for anyone push this plate of cannabis-infused pancakes away – I guarantee it.
There is just something nostalgically delicious about gingerbread that I simply cannot get enough of. Some argue that it is the first “Pumpkin Spice” – and I can see their point. Although gingerbread comes across as far less annoying and pretentious. This is a classic taste and the fact it can be implemented into a stack of silver dollar pancakes, each infused with a healthy dose of THC, places this breakfast platter at the top of the “Meal Mountain” in my opinion.
What makes this autumnal concoction of delight so pleasurable on the palette? Chances are it is the combination of ginger and molasses that tends to strike the taste buds in just the right way. At least, that is what I love about it, anyway.
For those that aren’t exactly well-versed in the genetic makeup of molasses, allow me to breakdown why I believe it is one of the best flavors – especially for breakfast. First and foremost, syrups of all natures are more than welcomed at the breakfast table. That pretty much goes without saying. Also, while many would see molasses as nothing but a “sweet treat” they would be shocked to learn there are actually a decent amount of health benefits hidden beneath its sticky demeanor. Molasses, at least the ones of the organic nature, are known to pack a ton of calcium, magnesium, and iron in each drop. No, people shouldn’t consider this their daily vitamin intake, but the fact that there are a heaping helping of healthy properties found throughout this delightful breakfast topping is nothing but positive, in my eyes (and stomach).

Enough of this endless praising of molasses and ginger, allow me to extrapolate on just what will be needed for you to whip up a batch of cannabis-infused gingerbread pancakes on your own.
The very first thing you will need to do is create some THC-enriched cooking oil – which is detailed in another recipe of mine. In short, you will need to decarboxylate your flowers, strain them, and subsequently add them to any cooking oil you prefer – coconut, olive, or what have you. It is really up to you at this point. Cannabis Cooking Oil
Once that cannabis cooking oil is ready to go, you will want to grab a handful of other ingredients to have at the ready before diving into this recipe. While the list of ingredients below may seem daunting and never-ending, I promise that each component is vital to the creation of some truly amazing hotcakes that you will be more than happy with. I guarantee it.
Now, I am sure you read through that list of ingredients and recognized every single item, except (possibly) the flax egg. To be honest, I had no idea what that was at first, either – so don’t feel bad. Also, don’t be intimidated, because it is super easy to make. All it is, is a mixture of 3 tablespoons of water and 1 tablespoon of ground flax seeds. Stir that up until it starts to have a rather thick consistency, then toss that into the fridge for about 15 minutes before applying it to the recipe.
Alright, now that you have all the ingredients ready, let’s make some cannabis-infused gingerbread pancakes!

Instructions

  • The very first thing you are going to want to do is combine all of the dry ingredients, and collectively sift them together, and place them to the side for later use. Next, in a decent sized mixing bowl, toss in the water, the melted cannabis cooking oil, the molasses, the hemp milk, and of course, the flax egg.
  • Then pick up those combined dry ingredients and slowly combine them with the wet ones, all while stirring. Keep that going until they are perfectly blended with one another. You will know you have reached that point when the newly created battered has somewhat of a “runny” character to it.
  • At this point, you are going to want to lubricate a pan or griddle with some extra cannabis cooking oil. Make sure it is on a medium setting of heat to allow the newly added oil to melt seamlessly. Upon that perfect melting of the oil, lower the heat a touch so you won’t burn any of the delicious molasses that is about to go into the recipe.
  • When you are ready, swoop up the batter from your mixing bowl and toss it on the pan or griddle. A good rule of thumb to create some stellar silver-dollar-sized treats would be to aim for about a tablespoon of batter for each of these soon-to-be-delicious hotcakes.
  • Allow those babies to cook until you start to see the rim of each pancake sizzle with bubbly amazingness, which usually happens between 3 to 5 minutes. That means it is time to flip those bad boys. Repeat this part of the process until each side is sporting a mouthwatering golden brown complexion.
  • What’s next? Nothing, except grabbing a plate (and some syrup) because that is it. Serve these suckers to yourself, or to your smoking companions, and enjoy one of the best breakfasts on the planet. What makes them even better – is you made them all by yourself. Way to go, my fellow stoner.
