Equipment
- Large saucepan
- Wooden spoon
- Measuring cups and spoons
- Potato masher
- Sterilized jars with lids
- Candy thermometer (optional)
Ingredients
- 4 cups fresh strawberries, hulled and mashed
- 2 cups granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 1/4 cup cannabis-infused honey or cannabis tincture
Instructions
- Wash and hull the strawberries, then mash them with a potato masher or fork until you reach your desired consistency.
- In a large saucepan, combine the mashed strawberries, sugar, lemon juice, and lemon zest. Stir well.
- Bring the mixture to a boil over medium-high heat, stirring frequently.
- Reduce the heat to medium-low and simmer for 30-40 minutes, stirring occasionally. The mixture should thicken and reach 220°F (105°C) on a candy thermometer, or it should pass the "wrinkle test" on a chilled plate.
- Once the jam has thickened, remove it from the heat and stir in the cannabis-infused honey or tincture until fully incorporated.
- Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top.
- Wipe the rims of the jars with a clean, damp cloth and seal with the lids.
- Allow the jars to cool to room temperature before refrigerating. The jam will continue to thicken as it cools.
Notes
- The potency of the jam will depend on the strength of the cannabis-infused honey or tincture used. Adjust the amount based on your desired effect and tolerance.
- Store the jam in the refrigerator for up to 1 month or in the freezer for up to 6 months.
- Clearly label the jars to prevent accidental consumption, especially by children or pets.
- Always start with a small portion to gauge the effects and avoid overconsumption.
